<p>The honey bee supplies us with a rich store of goodies, from honey to bee pollen, royal jelly and Nature&#8217;s antibiotic &#8211; bee propolis. Where, oh where would we be, without the industrious honey bee &#8211; and where will we be if their population continues to decline dramatically?</p>
<p>That doesn&#8217;t bear thinking about, so let&#8217;s think instead about their industry in travelling from flower to flower and removing the rich nectar that they then mix with their enzymes before depositing the resulting honey in their hives.</p>
<p>Long recognised as a premium natural food, honey is easily digestible and an absolute storehouse of nutritional goodness. It contains many of the ingredients needed to maintain good health, among these 78% sugars (fructose, sucrose and glucose), plus other vitamins, minerals, enzymes, proteins and amino acids.</p>
<p>Of course it&#8217;s important to remember that honey&#8217;s benefits depend more than somewhat on the quality of the honey in question! If it has matured slowly in the combs of the hives it is more likely to have a high enzyme and mineral content &#8211; and darker honeys tend to have more nutrients than light ones.</p>
<p>My favourite mountain honey is a dark amber thanks to its mineral richness.</p>
<p>A useful tip is to buy honey produced in the summer by flower-fed bees, as this is most likely to contain friendly lactobacilli and bifidobacteria.</p>
<p>It&#8217;s interesting that anti-tumour and cancer-preventing properties have been attributed to some of the phytonutrients found both in honey and propolis &#8211; and research has shown that these substances can prevent colon cancer in animals by shutting down the activity of the enzymes phosphatidylinositol-specific phospholipase C and lipoxygenase.</p>

<p>Bear in mind, though, that these phytonutrients&#8217; benefits are more or less eliminated when raw honey is extensively processed and heated.</p>
<p>Small amounts of the same resins found in bee propolis are contained in raw honey. This &#8216;bee glue&#8217; is used by honeybees to seal their hive, protecting it from bacteria and other micro-organisms. First, they need to manufacture it from combining plant resins with their own secretions!</p>

<p>A honey bee colony&#8217;s main goal is to produce as much honey as possible to survive through winter into spring.Unlike the majority of bees, including bumble bees, it is not just the queen bee who over-winters, but also some of the female workers.</p>
<p><strong>How honey is made.</strong></p>
<p>Worker bees (always females) live on average in spring/summer for 6 weeeks and spend those last 3 weeks of their lives foraging for nectar and pollen. A honey bee goes from flower to flower, often up to 1500 in one trip and flying up to 3 miles from her hive to collect nectar, to produce honey.</p>
<p>Pull a flower blossom from its stem and the clear liquid that falls from the end of it is nectar. In the UK and North America bees get nectar from flowers such as clovers, heathers and berry and fruit tree blossoms.</p>
<p>Using their long, tube like tongues as straws they draw the nectar out of the flowers and then store it in their &#8216;honey stomachs&#8217;. Honey bees have two stomachs; their honey stomach which they use to carry nectar and their regular stomach. The honey stomach is completely separate from the digestive stomach although there is a valve connecting the two which can be opened when they need to top up their energy levels.</p>
<p>          ]]&gt;</p>
<p>The honey stomach holds almost 2.5 oz&#8217;s of nectar and when full, it weighs almost as much as the bee herself. Once her honey stomach is full she returns to the hive and passes the nectar onto another worker bee or &#8216;house bee&#8217;. These bees collect the nectar from the forager honeybee&#8217;s stomach through their mouths. The forager worker bee then flies off again, weather and time of day permitting, to collect more.</p>
<p>The house bees &#8216;chew&#8217; the nectar for about half an hour during which time enzymes break the complex sugars (sucrose) in the nectar into simple sugars (fructose and glucose), making it both more digestible for the bees and less likely to be attacked by bacteria while it is stored within the hive. The bees then spread the nectar throughout the honeycombs where water evaporates from it, turning it into thicker syrup. The bees hasten the drying process by fanning the nectar with their wings. Once the nectar is gooey enough, the moisture level having been reduced to between 14 and 18%, to stop fermentation, it is now honey and the bees seal off (cap) the cell of the honeycomb with a plug of wax. The honey is stored until it is required. In one year, a colony of bees can eat between 120 and 200 pounds of honey. On average a strong colony will need 35-40lbs of honey to see them through winter, so greedy beekeepers need to ensure that they leave them enough.</p>
<p>As long as the moisture content remains under 18%, virtually no organism can successfully multiply to significant levels in honey as the high sugar content will kill them.This is why honey found in archaeological digs from thousands of years ago is still theoretically fit to eat.</p>

<p>Wasps and bumble bees have annual colonies that last for only one year. The colony dies in the fall with only the newly produced queens surviving the winter. The new queens leave their nests during late summer and mate with males. The queens then seek out overwintering sites, such as under loose bark, in rotted logs, under siding or tile, and in other small crevices and spaces, where they become dormant. These queens become active the following spring when temperatures warm. They search for favorable nesting sites to construct new nests. They do not reuse old nests. </p>
<p>Honey bees are perennial insects with colonies that survive more than one year. Honey bees form a cluster when hive temperatures approach 57° F. As the temperature drops, the cluster of bees becomes more compact. Bees inside this mass consume honey and generate heat so that those in the cluster do not freeze. As long as honey is available in the cluster, a strong colony can withstand temperatures down to -30° F. or lower for extended periods. </p>
<p>Wasp and Bee Stings</p>
<p>Wasps and bees sting to defend themselves or their colony. Stinging involves the injection of a protein venom that causes pain and other reactions. Wasps and bumble bees can sting more than once because they are able to pull out their stinger without injury to themselves. If you are stung by a wasp or bumble bee, the stinger is not left in your skin. </p>
<p>Honey bees have barbs on their stinger which remain hooked in the skin. The stinger, which is connected to the digestive system of the bee, is torn out of the abdomen as the bee attempts to fly away. As a result, the bee soon dies. If you are stung by a honey bee, scratch out the stinger (with its attached venom gland) with your fingernail as soon as possible. Do not try to pull out the stinger between two fingers. Doing so only forces more venom into your skin, causing greater irritation.       </p>

<p>Most people have only local reactions to wasp and bee stings, although a few may experience more serious allergic reactions. Local, nonallergic reactions range from burning, itching, redness, and tenderness to massive swelling and itching that may last up to a week. These local reactions can be treated with ice, vinegar, honey, meat tenderizer, or commercial topical ointment to relieve the itching. An allergic reaction may include hives or rash, swelling away from the sting site, headache, minor respiratory symptoms, and stomach upset. These allergic reactions are not life-threatening and can be readily treated with an antihistamine. </p>
<p>Very rarely, a person may suffer a life-threatening, systemic allergic reaction to a bee or wasp sting, which can cause anaphylactic shock (fainting, difficulty breathing, swelling, and blockage in the throat) within minutes of being stung. These systemic symptoms are cause for immediate medical attention. People with known systemic allergic reactions to bee or wasp stings should consult with their physician to obtain an Epi-PenTM or Ana-Guard Sting KitTM to carry with them at all times. The venoms of bees and wasps are different, so having a severe reaction to a wasp sting does not mean a person will have the same reaction to a bee sting.
